Spicy Mutton with Potato Curry

Ingredients :

v    Mutton, cleaned and excess fat removed-- 1 kg 
v    Potato, peeled and cut in 1.5 inch cubes --200 gm
v    Onion, finely diced--Half cup
v    Ginger and garlic , grated or paste --- 1 tbsp
v    Turmeric powder -- 1 tsp
v    Kashmiri red chili powder --1 tsp
v    Coriander powder -- 1 tsp
v    Garam Masala -- 1 tsp
v    Cumin Powder --1 tsp
v    Bay leaf --1
v    Cloves --5 
v    Green Cardamom --2 
v    Cinnamon --1 inch 
v    Salt -- to taste 
v    Ghee or Oil -- 2 tbsp
v    Green chili--5-6 piece
v    Fried Onion -- Half cup
v    Yogurt - Half cup


Method: 
1.    In a large dutch oven or pan, heat ghee or oil on medium heat.

2.    Add the bay leaves, cloves, cardamom, cinnamon stick, and cumin seeds. Sauté for a minute until they are fragrant.

3.    Add finely diced onions fry until they are browned, add ginger and garlic paste, Yogurt, turmeric powder, chili powder, coriander powder, salt, add all the spices and water. Sauté for another 30 seconds.

4.    Add the mutton and cook for 6-8 minutes on medium heat until the meat changes color.

5.    Add 1.5 cups of water, bring to a boil, then cover and cook for about 60-80 minutes until the mutton  is almost cooked. Check and stir at about 10-15 minute intervals. The meat should be tender by now. If not, cook for another 10 minutes.

6.    Add the potato cubes to the pan. Add 1/2 cup of water, stir well, cover with a lid, and cook for another 20 minutes until the potatoes are soft. Stir in between at about 10 minutes. Remove lid and check with a fork that both potatoes and meat are tender.

7.    Garnish with cilantro and enjoy.
