You all know Bangladesh is a country of six seasons. This season changes every two months. These seasons emerge in our country with their characteristics. The importance and impact of these seasons on nature and human life are immense. It's winter now. You must have noticed that winter morning sleep is very interesting. The mind doesn't want to get out of bed. Nature is covered with fog. In the mid-noon, the face of the sun is seen. Apart from this, when we remember the winter, the rows of the image of juice clay pots hanging from the date palm trees float in front of our eyes. We have to know some important things about the date sap. Winter and date sap are intimately involved. During the winter morning on the ways to the villages, in the hats and bazaars and neighbourhoods, the fascinating views of selling palm date sap is not seen anywhere else on earth.
Date palm tree stats to giving sap from its age of 5 years. In our country date palm sap collectors, locally known as "gachhis", become busy earlier in winter for preparing the date trees. Otherwise, the potters are busy making clay-made pots that are used for holding juice extracted from the date trees. Fresh date palm sap is collected by shaving the date palm tree, placing a tap, and collecting the sap in a clay pot overnight. Usually, the juice is collected from mid-"Ashwin" to mid-"Baisakh" months. The month of "Paush" and "Magh" is a suitable time to collect date juice. As the temperature rises, the quantity and quality of the juice decreases. Amount of date sap, sugar, quality, etc. also depend on the soil, climate, and types of the tree. Mainly the male date palm tree gives more date sap than the female tree. The sap of the male is also the sweeter than the female. On a cold winter morning, many have compared palatable date juice to nectar. If you drink a glass of fresh palm juice in the winter morning covering a fog sheet, you will find that it has greatly enhanced the winter trait. The juice arouses throughout the body. Fatigue overcomes. When the sun rises opening the fog veil, we notice bees, bumblebees, and butterflies dance on the clay pots hanging the date palm trees to taste it. They, too, are eager to get a little ambrosia.
Popular foods are also made from or using this date sap. The molasses is made from date palm juice for which the value is not reduced to the point yet. Solid molasses add spices to rural life. The best quality of molasses is known as "Nalini Patali". Five kg of juice can be made into one and a half kg of solid molasses. When we remember the wet "cheetai, bhapa, sidhupuli, malpoa, lalua" in the juice of dates, water comes to our tongue. Raw juice pies are delicious.
You will also be happy to know that date sap has a variety of nutrients. It has a lot of energy. This is called a natural "energy drink". It contains high glucose. It contains 5 to 20 percent of the sugar. Palm contains iron which helps in the production of haemoglobin. Palm jaggery is more sweet, nutritious and delicious than sugarcane jaggery. Palm jaggery contains all the protein, fat and mineral. For those who suffer from physical weakness, do not get stressed in work, palm juice is very useful for them. Jaggery made from date juice plays an important role in eliminating insomnia and constipation. People who have diabetes will avoid palm juice because it is high in sugar. And one thing to keep in mind is that we have to be very careful when collecting dates because it can contain many organisms or Nipah virus. Fruit bats drink raw sap and may contaminate the sap by shedding the Nipah virus through saliva and urine. Therefore, when collecting the juice, the mouth of clay pots should be covered so that the bats, birds or insects may not leave the feces in the juice clay pots. Covering the sap stream with a bamboo skirt is highly effective at preventing contamination. Therefore, it is not best to eat raw juice. If you wish, you can ignite or boil the raw juice in a light saucepan to destroy the organism. Then when cold, you can drink the juice.
Apart from this palm juice has tremendous economic value besides its medicinal quality. Many livelihoods are made by selling date juice, jaggery, solid molasses, and, different kinds of cakes, etc. We can plant palm trees on all roads, highways, railways, and demesne. But do you know the sad thing? The number of palm trees gardener in rural areas is decreasing day by day. Many gachhis are changing their ancestral profession. Tree cutters do not want to cut down the trees as before. Therefore, many are more interested in palm tree cutting than palm tree planting. To maintain the fame and tradition of date palm juice of the traditional village of Bengal, arbitrary palm cutting must be stopped immediately. Effective steps should be taken to plant this honeybee tree (palm tree). People from all walks of life can play an important role in this regard. So with everything we have, we will try to plant date trees in different areas and take care of these.
